However yesterday I tried to use VLC to save a BBC radio program stream to my hard disk using the example links in the email from David / drling0
VLC accepted the link and played the programme but I couldn't work out the 'save as a file stage'.

Does anyone have any idea how to transcode an audio stream and save as an mp3 in VLC ?

I have used VLC for many years, and it will play just about any platform I have come across.  Despite Epsen's proclamation about it being complicated, it is the simplest of all programs to install and to use.  I simply call it up, it loads almost intantly, and plays.  There is nothing faster or simpler I could think of.  I would have to say it is the very best player anyone could ever have. IMHO  And of course, it doesn't have any spyware embedded in it, as do many others.  I have never had a problem with it in playing any audio or video file.
